Cremorium

Cremorium or potassium tartrate, is a white powder, with a neutral taste and odorless. The cremorium is obtained from the must, during the vinification. During the fermentation of the must, at the bottom of the barrel settles the tartar, an impure form of potassium tartrate acid. The processing of the tartar results in the cremorium. In both confectionery and cooking, it is used in mixtures that contain air to stabilize their volume. It should not be confused with baking powder, as the cremorium has stabilizing properties and not leavening. As a leavening agent can be used only if combined with baking soda, as in this case, the cremorium, as an acidic agent reacts with the soda, resulting in the release of carbon dioxide, which has leavening properties.
