Central Africa is the source of sesame, as most varieties of wild, native sesame grow there. Its seeds, depending on the variety from which they come, differ in texture, size and color, as it ranges from white, yellow, brown to black. White or blonde sesame has a mild, sweet taste in contrast to black sesame which has a bit of bitterness and a light, smoky aroma. Sesame contains high biological value plant proteins and is rich in amino acids. It also contains fatty acids, most of which are monounsaturated (45%) and polyunsaturated (40%).
